I read many of the reviews of this book before I bought it but did not listen to the things people wrote. Basically they said this book was not for the beginning cook. They were right. The book is about 20% pictures and information about Ramsey and the rest receipes. But the problem was that most of the items are for people who really want to get to the top level of cooking.
Basically Ramsey is a professional cook. By that I mean the best of the best. He came from a poor background but worked his way up to the best restaurants in France and England. He was once awarded as having the 3rd best restaurant in the world (this was his restaurant in London) The reason he is so demanding on television on Hell's Kitchen is that he demands the best from his cooks. If you want a perfect meal you go to his restaurants. However you might be eating an item made with quail eggs or something that includes champaign foam or hazelnut ice cream or things of that sort.
There is no question in my mind that his foods taste great. But as for cooking them in my kitchen - thats a different story. I have no idea where to get quails eggs and such.
So if you are a really good cook and want to get better buy this book. I do suggest you might go to your local book store or library and flip through the pages to see if its what you want. The price of the book is high but on Amazon much better of course.

comprehensive bliss

This book is the result of extremely thorough research by the best authors and scholars in the business. It contains masses of detailed information not previouly brought to light, and helps both serious researchers and the general reader alike due to its easy-reading style and interesting coverage. There is an excellent timeline, with superb illustrations and revelations of all those designers whose names and works had not yet been recorded. A must for all teachers of any of the areas of design in the book, such as Interior Design, Jewellery, Ceramics, Film, Textiles, Fashion, or Furniture. A superlative addition to the Design History world. I just wish I could see the accompanying exhibition.

About the Author
"Terry and Gerry Audesirk" grew up in New Jersey, where they met as undergraduates. After marrying in 1970, they moved to California, where Terry earned her doctorate in marine ecology at the University of Southern California and Gerry earned his doctorate in neurobiology at the California Institute of Technology. As postdoctoral students at the University of Washington's marine laboratories, they worked together on the neural bases of behavior, using a marine mollusk as a model system. Terry and Gerry are now professors of biology at the University of Colorado at Denver, where they have taught introductory biology and neurobiology since 1982. In their research lab, funded by the National Institutes of Health, they investigate the mechanisms by which neurons are harmed by low levels of environmental pollutants. Terry and Gerry share a deep appreciation of nature and of the outdoors. They enjoy hiking in the Rockies, running near their home in the foothills west of Denver, and attempting to garden at 7000 feet in the presence of hungry deer and elk. They are long-time members of many conservation organizations. Their daughter, Heather, has added another focus to their lives. "Bruce E. Byers," a midwesterner transplanted to the hills of western Massachusetts, is a professor in the biology department at the University of Massachusetts, Amherst. He's been a member of the faculty at UMass (where he also completed his doctoral degree) since 1993. Bruce teaches introductory biology courses for both nonmajors and majors; he also teaches courses in ornithology and animal behavior. A lifelong fascination with birds ultimately led Bruce to scientific exploration of avian biology. His currentresearch focuses on the behavioral ecology of birds, especially on the function and evolution of the vocal signals that birds use to communicate. The pursuit of vocalizations often takes Bruce outdoors, where he can be found before dawn, tape recorder in hand, awaiting the first songs of a new day.

Great Textbook and Future Resource

I bought this textbook for an Intro to Child Development online and I have found it highly useful. Since I'm in an online course the majority of the instruction comes from this book, and I find it to be thorough. I am planning on becoming a teacher, so I am going to keep this book to help me understand what stages of development my students are in, as well as to study for the Praxis.

About the Author

MEHMET TOY, PhD, is a Distinguished Engineer at Comcast and represents the company in the Metro Ethernet Forum (MEF) and IEEE standards. Previously, he held management and technical positions at ADVA Optical Networking, Intel Corporation, Verizon Wireless, Axiowave Networks, Fujitsu Network Communications, AT&T Bell Labs, and Lucent Technologies. This has been a wonderful addition to my [bread] baking library, though it covers much more than bread baking alone. The introductory chapters have a lot of information that is often overlooked by many authors, including notes on determining friction factor (i.e. the degree to which a mixer or hand-kneading will raise the temperature of a dough), maintaining appropriate dough temperatures by adjusting the temperature of water added to doughs - even including a formula for determining how much ice needs to be added to a volume of water to cool it to the appropriate level to maintain dough temperatures.

As mentioned, the first few chapters are rather dry and technical, but these chapters are crucial in understanding how baking works and, in taking the time to read and understand these chapters, one can gain the technical prowess needed to troubleshoot baking problems and ultimately greatly improve their baking.

The remainder of the book is dedicated to formulas, and let me tell you the formulas are fantastic. Note that there are NO VOLUMETRIC FORMULAS INCLUDED - ALL THE FORMULAS ARE DONE BY MASS (GRAMS/OUNCES)! For those of us that wish to have consistent, excellent results, this is no surprise and is very much welcomed. Personally, I tend to avoid baking books that give formulas in cups and tablespoons rather than grams, as I don't want to have to do all the conversions to mass (and ultimately bakers percentages) myself. The ingredient lists in the formulas (recipes) are given in 3 columns: US weights (pounds, ounces), metric weights (grams) and finally (and most useful) bakers percentages. After the ingredient list, the procedure is clearly listed in a step-by-step manner that ensures mistakes are avoided.

I've only tried a handful of the formulas, but they seem to be very solid and, the few that I've tried, have produced great results. I've looked over many of the formulas and compared some of them (like the brioche formula, for instance) to my more tried and true formulas - those that I've tested and know to be successful. My brioche formula, for instance, is based on the one described by Raymond Calvel in "The Taste of Bread." The sugar in Gisslen's formula is less than half of that used in Calvel's; Gisslen uses 15% more butter in his formula than Calvel does. Aside from this, the differences are rather minimal, differing by only around 5-10%. The procedure itself bears some similarities to Calvel's, and I'm interested to see how the final products compare.

Gisslen's formulas use instant yeast, and although I prefer formulas that use fresh yeast (which are increasingly hard to find), instant yeast is the next best choice (as opposed to active dry). If you prefer fresh yeast or active dry, the conversion is rather easy to do, so it won't be a problem to adapt these formulas to your own yeast preference.

The level of detail and illustrations and photos that accompany many (or most) of the formulas are superb, and I have yet to come across a book that does a better job using visual aids (photos, diagrams, etc.). Specifically, the chapter on 'Advanced and Specialty Cakes' includes a cross-sectional diagram that shows exactly how the cake should be assembled, layer by layer, ingredient by ingredient.

Although my primary interest is bread and this book devotes only a small portion of its near 600 pages to bread, I still say that this book is an indispensable addition to any serious baker's library, and would serve as a wonderful "jumping off point" for novice bakers wishing to take their baking to the next level, or for intermediate or advanced bakers wishing to hone their skill or expand their repertoire.

Although a bit more expensive than many other books in the same category, the extra price is evident in the quality and content of this exceptionally well put-together publication. Highly recommended for novice and advanced bakers alike.

good basic book

I think a previous reviewer who gave the book only one star was being unfair. Yes, the book does have a lot of similarites to Professional Baking, but they are not the same book. I would say that most people probably only need one of them, but that does not make this book a bad book. From my reading of it, Professional Baking was designed to be used in baking & pastry programs at colleges (as it was used in the pastry program I attended), while The Professional Bakeshop is one you would pick up on your own when you needed a basic grounding in pastry and baking. The basics are covered well in this book, with explanations on how many aspects of baking work.

So disappointed!!!

I thought this book was going to concentrate on bread baking (like the cover suggest) but this is basically "Professional Baking" (Gisslen's other baking book) in a new wrapper and condensed. So now I basically have two of the same book. Even the pictures and the recipes are the same between the two books! If you already have "Professional Baking" don't waste your money on this "new" book because you won't really be getting any new information or recipes.

To his supporters, Mitchell-now in prison on a 1992 conspiracy conviction; he will be released in 2001 and eligible for parole earlier-is a positive force who taught African Americans self-empowerment. But media and police accounts link his organization to a series of brutal murders, and testimony at his dramatic trial (which deadlocked on a racketeering charge of murder, arson and extortion) portrayed a cruel cult rife with mind control, assaults and slave labor. Mitchell, who calls himself Yahweh Ben Yahweh ("God, Son of God") also beat three murder raps when Florida state attorney Janet Reno (now U.S. Attorney General) lost one death-row case against him and dropped charges on two other homicides. At the age of three, Hulon Mitchell declared that he was the messiah of black people, and at various stages of his life he was known as Hulon X, Father Michel, Brother Love, Moses Israel, Yahweh Ben Yahweh, Yashua the Messiah, and, finally, God himself. Freedberg, who won a Pulitzer Prize for her coverage of Yahweh for the Miami Herald, meticulously details the life of this charismatic son of a preacher, including his poor childhood in Oklahoma, his military service, his work in the Civil Rights movement, and his growing disenchantment with organized religion. His nationwide empire was eventually brought down by charges of murder, arson, sexual coercion, and mail fraud. The writing is crisp and well documented, and the black-and-white photos are numerous and graphic. An excellent chronicle of greed, exploitation, and murder, all ostensibly in the name of religion.

A gripping yet somewhat unsatisfying account of one of America's weirder stories: the saga of Yahweh Ben Yahweh (God Son of God), the Miami-based charismatic black man who called himself the Messiah. Freedberg, who won a 1991 Pulitzer Prize for her Miami Herald coverage of Yahweh, reconstructs events in an animated narrative. Hulon Mitchell Jr., born in Oklahoma in 1935, led many lives: gung- ho Air Force man; NAACP supporter; Black Muslim proselytizer; Atlanta radio evangelist; and Orlando street preacher. In 1978, he moved to Miami and launched a new religion that boosted black identity, denigrated whites, and declared that a journey to a Promised Land was near. He built a headquarters for the group (whose many names included the Nation of Israel and the Tribe of Judah) in riot-scarred Liberty City, where his turbaned, white- robed followers not only proselytized and sold taped sermons and food, but also contributed tithes and welfare checks. Laggards were punished and critics beaten, one even killed in the group's Temple of Love. Meanwhile, Yahweh's followers won favor with local politicians, manipulated the media, and gained a reputation as a group that could reclaim ghetto real estate. Then, one month after Miami Mayor Xavier Suarez had proclaimed Yahweh Ben Yahweh Day in 1990, the FBI swooped in to arrest Yahweh and several followers. A bizarre and complex trial led to the convictions of Yahweh and some of those charged with him for conspiracy involving various acts of violence (Yahweh got 18 years); but Yahweh beat three state murder raps. Though Freedberg scores the justice system for not addressing the political corruption that accommodated Yahweh and his personality cult, she does too little to explain the sect's appeal to blacks or to question the coddling posture of establishment institutions toward Yahweh (or her own newspaper's delay in picking up on the story). Well-written Account on Cult Fanaticism

This true account of the Nation of Yahweh is shocking, stunning, and at times painfully hilarious. I can honestly say the author was unbiased and is strictly reporting the facts, using exact times and dates when describing certain incidents and she uses the same vocabulary that the actual people who are part of this bizarre drama used. In the back of the book is a list of Resources that she used in the writing of this book. On the one hand, it seems that the Nation of Yahweh cleaned and straightened up poor neighborhoods in Florida. But it came at a price, as this book eloquently describes.

As I read the book I felt a sad pity for the families of the members of this cult, and the cult members themselves. I also felt compassion for those whose loved ones were caught in the line of fire by members swept away in delusional fanaticism. There were times when I wanted to believe that what I was reading couldn't possibly be true, but when I saw the black and white photographs in this book, and especially when I read the details that describe some of the practices that are still in use by members of the Nation of Yahweh at the present time, I had to accept the inevitable.

The parts that were so ridiculous that I had to laugh were the incidents that took place during the trial- it makes one question the efficiency of law and order in America, the needless red tape and frustration for those who really are trying to bring justice. Also the frustration for those who have lost loved ones and yet see the murderers (and law breakers) get acquitted or just a slap on the wrist- in this case, the trial of Hulon Mitchell Jr. and Co. (also comes to mind is the O.J. Simpson case, and the police officers in the Rodney King beating.) This book also made me realize that we need to seriously rethink the jury process and how we select jurors in trials of this magnitude.

The book re-affirms how when money talks, bull**** walks, and anyone can be bought. I am referring of course to the business peoples, law enforcement, and politicians of Miami (and the other Florida cities that were mentioned) during the 1980's when these events took place. Many of them simply looked the other way despite the growing evidence that murders and other abuses were taking place because it simply would have costed them their careers, money, and votes.

As for the Nation of Yahweh, they are still alive and well; they're just not as out in the open as they once were and they are all spread out. Though there may no longer be any signs of racism in their present literature, many of the same rhetoric and codes of behavior that was described in detail in this book is still in use at the present time- example: Mr. Hulon Mitchell Jr. still believes he is the Messiah incarnate, Mr. Mitchell was "crucified" by the U.S. gov't (meaning he served jail time), Jesus never existed, women are unclean during their menstrual cycle, all forms of birth control are not to be used, having as many babies as soon as possible is the goal, occasionally wearing white tunics, turbans & tetragrammaton, tithing, mandatory attendance of the Feasts, the list goes on.

I highly recommend this book to:

-anyone who is dealing with a friend or family member who might be/or is in a cult
-students of law, psychology, and sociology.
-anyone involved with a Nation of Yahweh member, past or present.
-those considering joining the Nation of Yahweh
-those who like a good crime story-in this case, true crime.
-anyone sincerely willing to take a deep closer look at the American society and how it creates situations like the ones described in this book.

This book is a great example of excellent journalism- the kind that seems to no longer exists on most media outlets (be it ABC, NBC, Fox, or anything owned and operated by Clear Channel) unfortunately.

This book details the rise of the religious leader Yahweh ben Yahweh. From reading his own publications, he seemed to see himself (or Himself) as a returned Jesus. He quoted texts of Jesus from the Bible and applied them to himself. As a theologian and a Bible student, this as a bit unnerving. He published some books teaching Biblical Hebrew, which he considered to be a sacred language, but he was incorrect with some very basic letters. This book says that throughout his life he considered himself to be unique and that became evident when he started identifying himself with God (or Yahweh). This book cautions us to take care when alleged prophets make exalted claims. The basic message is, watch out. Be careful what you believe or accept.

More or less a companion-piece to ZEBRA, which was about scores of black on white killings, in California, this tome is about a bunch of black on white killings, on the OTHER coast. Both groups of pervs were influenced, helped, defended, and DIRECTED, by forces of the NOI (Nation of Islam). Scary exposition on just how much white folks are hated by certain black folks. You, too, can become a "Death Angel," just kill enough white people, and you're IN this exclusive club for racist, cowardly murderers.

About the Author
Halko Weiss, PhD, is a clinical psychologist and lecturer on mindfulness, couples therapy and body-centered psychotherapy for, among others, the Bavarian Licencing Board for Psychotherapists, ZIST Academy, University of Marburg, and the University Hospital in Tuebingen, Germany. Dr. Weiss initiated the largest multi-center scientific research project to date on body psychotherapy, authored 20 scientific publications and six books, and co-founded the Hakomi Institute in Boulder, Colorado. Leading hundreds of workshops and training courses throughout Germany, the US, Canada, and Australia, Dr. Weiss has been instrumental in developing the Hakomi Method and its curricula used worldwide. He also established a successful coaching training program in Germany and became the market leader there in Emotional Intelligence trainings for executives.

Greg Johanson, MDiv, PhD, LPC, NCC, a founding trainer of the Hakomi Institute, has a background in therapy as well as theology. He is a member of the American Psychological Association as well as the American Association of Pastoral Counselors. He has been active in writing, publishing over 175 items in the fields of psychotherapy and pastoral theology including (with Ron Kurtz) Grace Unfolding: Psychotherapy in the Spirit of the Tao-te ching. Greg has served on the editorial board of six professional journals and as editor of Hakomi Forum and has taught as an adjunct in a number of graduate schools. He has a special interest in integral psychology, which relates spirituality to individual consciousness and behavior in the context of social and cultural issues.

Lorena Monda, MS, DOM, LPCC, is a practicing psychotherapist and a doctor of oriental medicine. Lorena is a trainer for the Hakomi Institute and adjunct faculty at the AOMA Graduate School of Integrative Medicine in Austin, Texas, where she teaches courses in clinical communication integrating Hakomi skills. She is the author of The Practice of Wholeness: Spiritual Transformation in Everyday Life;� a coauthor of The Clinical Guide to Commonly Used Chinese Herbal Formulas and The Clinical Handbook of Chinese Veterinary Herbal Medicine; and a coeditor of I Have Arrived, I Am Home: Celebrating 20 Years of Plum Village Life. Lorena lives in New Mexico with her husband John Scott and teaches Hakomi in the United States and internationally. She is currently working on a book called Mindfulness, Qi, and Transformation.

Praise for an outstanding book.....

Hakomi changed my life. It is one of the original mindfulness-based psychotherapies and has flown under the radar for far too long. Hopefully this elegant and impressive book will change that. I can’t recommend this compassionate and effective modality strongly enough. If you are looking for an experiential method that creates real change in unconscious beliefs and behaviors in a collaborative and non-pathologizing way, Hakomi is that method. This book is also timely to what is going on now in the fields of neuroscience, trauma, attachment theory and emotional regulation. The multiple authors create a coherent and articulate volume that I hope becomes a doorway for many into this transformative practice.

Hakomi is extraordinary work- an intensely loving, intelligent, elegant method.
I'd like to see a copy in the hands of every one of us who is an agent of healing, embodiment, empowerment, understanding, and love.
Do yourself and humanity a favor, and read this book!
